Thinking of building my own PC soon, but I'm looking for just something that will run Overwatch and World of Warcraft at high quality graphics. Any suggestions?

What's your budget? Do you want to want to stream or do video editing?

Anything you can get now will run those games at high settings. Blizzard is the best company at making highly optimized games so you could play their games on a potato.

The problem right now is that most of the good stuff comes out next year like the RTX 3070, the 3060, the Ryzen 5 5600 etc.

Are esports the only games you are interested in? Are you sure you don't want to run really high end PC games? If you ONLY wanna play Overwatch and WOW, you can opt for the cheaper Ryzen 3 3300X or the Ryzen 3 3100. For the GPU, you can look at the RTX 2060 or go down to the 1660 or 1060.

Another problem I'm noticing is the prices for most of the GPUs are really messed because of scalpers.

I would wait after new year. Like erasmus said, short supply and scalpers are not good for new pc builders right now. I'm also planning a brand new pc build but I'm waiting until this year ends for supply to catch up to demand. New AMD graphics cards are coming out on the 28th of this month so you should at least wait until then so you can compare with nvidia and see what their prices are after AMD's reveal
